Ground Beef Fajita Bowls
Ground Beef
Taco seasoning
Bell peppers, thinly sliced
Onions, thinly sliced
1 Tbsp. olive oil
Cooked rice
Toppings: tomatoes, avocado, shredded cheese, salsa, sour cream, cilantro, fresh lime juice

Brown the ground beef with a few tablespoons of taco seasoning.  Drain the excess fat.  Add olive oil to a nonstick skillet and sauté the peppers and onions on medium low until soft, then increase the heat to brown the edges.  Sprinkle with taco seasoning while cooking. Serve the seasoned beef and veggies over rice with desired toppings.  ENJOY!

2 Cups Full Fat Cottage Cheese 🧀
4 Whole Eggs 🥚
Block of Low Moisture Mozzerella
Grated Parmesan Cheese

Pepperoni or Your favorite low-carb toppings 🍤🥓🍄

Preheat oven to 350. Immersion Blend together cottage cheese and eggs until smooth. Pour onto 16 inch pizza pan: https://amzn.to/3WCGYCa lined with parchment paper. Bake as shown in video. (very important to see how it should look and for modifications for extra toppings.) Top with Mozzerella, Pepperoni, and anything else you might want. Bake at 400 for 10 minutes. Enjoy!

Diabetic Oreo Poke Cake Recipe
1 pkg of Swerve Chocolate Cake
1 (6 ounce) container of plain Greek Yogurt
¼ cup water
2 pkg of sugar free chocolate pudding
2 ½ cups Fairlife (note - if want lower carb, use heavy whipping cream)
1 8oz container of Tru Whip or Sugar Free Cool Whip

Preheat the oven to 350 degrees. Spray 8x8 pan with non-stick cooking spray.
Mix Swerve Chocolate Cake mix with greek yogurt and ¼ cup of water. Pour in a lined pie pan. Bake 35 minutes
When the cake is done, poke holes all over the cake using a wooden spoon.
Pour ½ cup Fairlife on top of the cake. Place in the fridge.
Pour sugar free pudding packs in a bowl. Combine with the remaining 2 cups of Fairlife.
Allow to cool in the fridge for an hour. Pour pudding mixture over cake.
Spoon Sugar Free cool whip mixture on top. 
Serve.

PEANUT BUTTER COOKIE RECIPE
(makes 12 cookies)

Ingredients:
1/2 cup natural peanut butter (125g)
1/4 cup honey or agave (60ml)
1/4 cup unsweetened applesauce (65g)
1 cup ground oats or oat flour (100g)
1.5 tbsp cornstarch or tapioca starch
1 tsp baking powder

NUTRITIONAL INFO (per cookie):
107 calories, fat 2.3g, carb 19.9g, protein 2.4g

Preparation:
In a bowl, add room temperature peanut butter, your sweetener and applesauce, beat with the mixer for 1 minute.

Add half of the oats, cornstarch and baking powder, and gently mix it in, until the dough starts to form.

Add the rest of the oats and mix until everything comes together.

If the dough is too sticky to work with, place the cookie dough in the freezer for 5 minutes.

Scoop the cookie dough (35-40 grams) and roll with your hands, you&apos;ll end up with 12 equal balls.

Flatten a bit and transfer to a lined baking tray.

Using a fork, press down each cookie to create authentic criss cross marks.

Bake cookies at 350F (180C) for 10 minutes.

Let it cool on a baking sheet for 10 minutes, then transfer to a wire rack.

When completely cool, serve and enjoy with your favorite milk.

1/2 t Vanilla extract
1/2 t baking soda 🌿
1/2 t salt

Method

Step 1
Preheat oven to 375° F.

Step 2
Combine flour, baking soda and salt in small bowl. Beat butter, granulated sweetener, brown sweetener and vanilla extract in large (yellow) mixer bowl until creamy. Add egg, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

Step 3
Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Sugarfree diabetic friendly keto brownies. This is a healthy brownie recipe, which can be enjoyed by weight watchers in moderation. In this recipe, we are using almond flour and not maida.

Ingredients

Almond flour - 1/2 cup
Eggs (room temperature) - 3
A pinch of salt
Unsalted Butter (softened) - 10 tbsp
Cocoa powder - 1/4 cup
Sugar free Dark chocolate - 100 gms
Erythritol or Xylitol or any sugar-free powder - 1/4 cup
Baking powder - 1/2 tsp
Instant coffee pdr - 1 tsp (optional)
Vanilla extract - 1 tsp

Method

Line a baking tin with baking paper and grease it with butter. or else, line it with an aluminium foil. Keep this aside.

Preheat the oven in 170 degree Celsius for 15 mins.

In a microwave bowl, melt butter and chocolate. Keep this aside to cool down.

In another bowl, combine, almond flour, cocoa powder, erythritol, baking powder and coffee pdr. Keep this aside.

In a deep bowl, beat eggs, a pinch of salt, vanilla extract. Then add the melted chocolate mixture. Beat well till everything is nicely mixed.

Now, add the dry ingredients into it and mix, till everything is combined. Don&apos;t overmix the batter.

Pour this brownie batter into the prepared tin and keep it in the preheated oven for 25-30 mins or till it is baked.

Once cooled, take it out from the tin and serve.

►DIRECTIONS:
1. Preheat oven to 350 degrees F, line metal 9 x 5 loaf pan with parchment paper or leave non-stick as is. Spray only bottom and lower 1&quot; with cooking spray. Set aside.
2. In a large mixing bowl, add bananas and mash with a masher. Then add eggs, sweetener, oil, vanilla, cinnamon, baking soda, baking powder and salt; whisk until combined.
3. Add almond flour and stir and mix gently with spatula to combine.
4. Pour batter into previously prepared loaf pan and bake for 50 minutes or until the toothpick inserted in the middle comes out clean.
5. Remove almond flour banana bread from the oven and transfer to a cooling rack to cool off for 10 minutes. Remove bread from a loaf pan and let it cool another 10 minutes. Slice with sharp serrated knife - works best with breads to keep them from falling apart.

KETO BEEF STEW
Serves: 8

3 tablespoons butter
2 lbs stew meat or beef chuck or roast, cubed
4 cups beef or chicken broth
½ (14oz) can diced tomatoes with juices
1 ½ cups green beans chopped into 1 inch pieces
6 oz portabella mushrooms, chopped
8 oz daikon radish, cubed
½ medium carrot, sliced
½ cup yellow onion, finely chopped
½ cup red wine
1 tablespoon minced garlic
1 tablespoon apple cider vinegar
2 bay leaves
1 tablespoon tomato paste
1 teaspoon dried thyme leaves
1 teaspoon onion powder
1 teaspoon black pepper
½ teaspoon salt

Add all ingredients to a slow cooker and cook on low for 5-6 hours or high for 3-4 hours.

Serves: 6

2 pounds boneless, skinless chicken thighs or breasts
1 packet ranch seasoning
16 oz cream cheese, cubed
10 slices bacon, cooked &amp; chopped
1 ½ cups shredded cheddar cheese
⅓ cup sliced green onions

Add chicken to the liner of a slow cooker. Sprinkle ranch seasoning over chicken. Top with cubed cream cheese. Cover and let cook on low for 5-6 hours or high for 3-4 hours. Turn heat to warm. Shred chicken. Stir in bacon. Top with shredded cheddar cheese. Cover and let sit for 5-10 minutes or until cheese has melted. Top with green onions.

INGREDIENTS- 

1/2 cup salted butter, softened
1 tsp vanilla extract
1 egg ( substitute it with mixture of 2 tbsp powdered flax seeds and 5 tbsp water)
1 + 1/2 cup ground almonds/ almond flour ( simply process almonds in a blender into a fine powder. Do not blend for too long otherwise It will form almond butter)
1/2 tsp baking powder
1/2 cup sugar free dark chocolate

NOTE- there is no sugar in the chocolate. It depends completely on the little sweetness from almonds and chocolate. If you wish you can add  Erythritol/ Stevia into your dough.

🔎 In this video, we’ll share 4 sugar-free desserts that are healthy for diabetics. 

4️⃣ Nice Cream
Nice cream is a healthier and more diabetic-friendly version of ice cream.

It is commonly made using: 
🗹 Frozen fruit such as bananas and berries
🗹 And plant milk, including almond milk or soy milk.

Making nice cream at home means that this dessert doesn’t contain any added sugar!

3️⃣ Avocado Chocolate Mousse
A chocolate mousse made of avocado is a great alternative dessert option for diabetics.

Adding avocados to your diet is often recommended for diabetics as this food contains:
🗹 Potassium
🗹 Fibers
🗹 Vitamins, and
🗹 Monounsaturated fat oleic acid

On the other hand, cacao’s flavonoids can:
🗹 Slow down carbohydrate digestion and absorption
🗹 Improve insulin secretion, and
🗹 Reduce the risks of type-2 diabetes complications. 

2️⃣ Smoothie Popsicle 
You can make healthy smoothie popsicles by using foods with a low glycemic index as these types of food have clinically proven to slow down the conversion of carbs into glucose.

Smoothies are low in carbohydrates and often contain:
🗹 Protein - through yogurt or added plant powder, 
🗹 Healthy fat - with nuts, seeds, or avocado, and
🗹 Fibers - when adding berries, bananas, and leafy greens.

1️⃣ Bliss Balls
Quick and easy to make, bliss balls can contain any:

🗹 Seeds
🗹 Spices, and 
🗹 Fruit

To make bliss balls, simply add them to a food processor:
125 grams of oats
100 grams of your favorite nuts, and
2 tablespoons of water

And roll the mixture into small balls before popping them in the fridge.

Soaking Time              : 6 hours or refrigerated overnight

Vanilla Essence                          : 2 tsp
Plain water                                  : 4 cups 
(can adjust the consistency according to your choice)
